Recipes for meat loaf and a pot of tomato and corn and are diabetic friendly
These recipes can be cooked in your oven at the same time, allowing you prepare their food almost entirely in the oven while you go on your business. No need to be on top of the stove to prepare this meal Dot meat Loaf and Tomato Casserole and corn. As the pot is full of vegetables, you only need to serve with your favorite salad green for a full meal. Both recipes are also great for diabetics. The bread is not filling meal high in carbohydrates like most he does is especially good for diabetics.
MEAT LOAF POINT
2 pounds ground sirloin
4 eggs
2 medium onions, chopped
2 cups tomato juice
2 tsp salt
1 teaspoon black pepper
Preheat oven to 350 degrees.
Put the eggs in a large mixing bowl and beat well. Add ground sirloin, onion, salt, pepper and tomato juice. Using your hands, mix well. Form a pan on a baking tray and bake at 350 degrees for 1 1 / 2 hours or until browned and cooked through.
CORN AND TOMATO CASSEROLE
1 medium green bell pepper, seeded and diced
1 clove garlic, minced
2 teaspoons melted butter
1 tablespoon flour
2 / 3 cup lowfat milk
1 / 2 teaspoon salt
few dashes black pepper
1 / 8 teaspoon dried basil
1 / 8 teaspoon dried oregano
1 can (appox. 16-ounces) whole tomatoes, drained
1 package (10-ounce) frozen peas and pearl onions, thawed slightly
1 can (12 ounces) whole kernel corn, drained
Preheat oven to 350 degrees.
In a large saucepan, saute the peppers and garlic in butter until pepper is tender. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add milk, add salt, pepper, basil and oregano. Cook the mixture over medium heat, stirring constantly, until mixture is thickened and bubbly. Add tomatoes, peas and onions, and corn. Remove from heat.
Spray a 2-quart casserole with cooking spray. Pour hot mixture into the dish and bake at 350 degrees for 50 minutes.
