The Mystery of Polish Sausage – What is Kielbasa?
No doubt the word Kielbasa has worldwide recognition, but is also often misunderstood. Kielbasa is the Polish name for sausage. Sure, but what: American, provolone, Swiss, Gorgonzola, Gouda, Muenster – you have to provide some details. No specific sausage called kielbasa but there are many who bear the kielbasa sausage word as part of the name.
We only know a sausage that bears the word "Polish" in their name and that is Polish Smoked Sausage (Polska Kielbasa Wedzona). This is probably what brought the first immigrants to America. The problem we face here is that you can find Polish sausage at most supermarkets in the U.S., and no two are the same way. However, smoked Polish sausage has been well defined for centuries and everybody knows what goes inside Poland. It is not our intention to become judges in this matter, but based on government standards of Poland Polish smoked sausage. These rules have remained unchanged for the past 60 years.
Before the anger many people who have been making Polish Smoked Sausage in their own way for years, let's clarify something else. It is perfectly possible to add an ingredient you or your children like his sausage. You still have full right to say you made a better sausage than the famous smoked Polish sausage. You may say that your grandfather who came Poland made the best Polish sausage in the world and we are honored that. Maybe he used chicken broth instead of water or maybe he said something else.
