Making Mead (honey wine), A Simple Recipe
Brewing mead honey, short and sweet.
Honey Mead
** 15 pounds of honey in five gallon batches makes good fresh, but 20 pounds of honey is like cotton candy. I like to use pasteurized honey clover processed from Sam's Wholesale Club or Wal-Mart. I have tried Honeymoon different with different results. Honey makes a dramatic difference in body and taste of your mead. Pasteurized and processed honey negate the need for Campden tablets, provided and when you're not putting in anything that may be contaminated with bacteria. Use filtered water good too. It really makes a difference. I use a Britta filter.
INGREDIENTS per gallon of mead to be performed:
2 1 / 2 to 3 pounds. (About 26 to 32 fl. Oz) raw honey (dry to semi-sweet)
The water from a gallon (Specific gravity – 1.085 to 1.105)
1 tsp. Super Ferment (or 2 teaspoons. Regular "nutrients")
2 tsp. acid mixture (Or 3 / 4 tsp. Teaspoonful of tartaric acid and 1 1 / 4. Malic acid)
1 tsp grape tannin
* 1 Campden tablet (crushed or substitute 1 / 8 tsp. Sodium metabisulfite)
1-2 pkgs. wine (eg Premier Cuvee, Champagne, Côte des Blancs, Sherry), mead yeast
PROCEDURE:
1. Mix all ingredients except the yeast and the Campden tablet. Stir the must until the honey and the additives are completely dissolved. Cover the pan to prevent dust and air with large plastic sheet.
2. Crushed and dissolved Campden tablet in 1 ounce of warm water. Add this to the must and stir well. Cover the can again, and closed the film plastic. Let stand for one day, stirring several times.
* ALTERNATIVE: Heat honey with an equal volume of water at 180 ° F and let stand for 15 minutes to pasteurize. (DO NOT BOIL!) Cool and add the remaining water before proceeding to the next step.
3. Rehydrate the spray-dried yeast 1 / 2 cup warm water (95-100 ° F) water in a sterilized jar and cover for 20 minutes. (If you use "Mead" yeast, prepare a starter 48 hours before using.) Add the yeast "slurry" / boot to the mix. Re-cover the main fermenter and allow fermentation to proceed for 30-40 days or until the foam disappears.
4. Syphon the mead in a sterile glass jar. Prevent the transfer of sediments and aeration both as possible. Make sure the juice completely filled the jar – in the neck. Attach a fermentation lock and allow fermentation to go to the end (0.995 to 1.020 SG).
5. A week after fermentation has ceased, siphon the mead into another sterile glass jar. Again, avoid transferring sediment and aeration. Crush, dissolve and add 1 / 2 Campden tablet per gallon for the mead. Let stand mead for a month in a cool, dark and repeat the "racking" process. If after three months, the mead is clear – the same bottle. If it is not clear, repeat this step each month until it is clear and then bottle it. The mead can be sweetened with honey added to taste, if desired, after Stabilisation (tablet 1 / 2 tsp. Potassium sorbate 1 2 / Campden per gallon).
Note: All equipment must be thoroughly washed and sterilized with a solution of sodium metabisulfite. Fermentation temperature must be less than 60 degrees F. or above 80 degrees F.
For an interesting variation, try adding a 6 oz. frozen juice (eg orange, apple, cranberry) and cut the acid mixture of 1 teaspoon.
Proportion of different fields – (parts by volume of honey: parts by volume of water)
SECO: 01:04 (2 1 / 2 pounds. Miel per gallon)
Semi-dry: 01:03 (3 lbs. Miel per gallon)
SWEET: 1:2.5 (4 lbs. Miel per gallon)
